I see how this works now. supply voltage on its own is not enough to bring the gate up to allow it to conduct. but put the supply voltage through the transformer into a large capacitor, and the secondary side generates a voltage high enough to bring the gate up and switch the fet on.
p channel mosfet circuit works in the same way except the gate is pulled down below 0
