When  the source voltage increases  Zener diode enters into reverse conduction state in specific breakdown voltage and it maintains same voltage across the load irrespective of source voltage.

Each Zener has a specific current where the reference voltage is most accurate, for EC this current is13.6 mA, for other Zeners consult the spec sheets or test. If possible design the final circuit to use the best Zener's profile.
