5 V are okay, but 1 Amp for a microcontroller? Isn't that a bit too much?

Karsen you can take as current as you need under 1A thus it can be used for microcontrollers with any trouble at all. Icarroll just turn off the switch, start the simulation and turn on the switch.

Yes yes, true. The 1 A is total maximum current and it's achieved with the shunt resistor Imax = 0.7 V / R
