The "unlimitied voltage build up" does only work theoretically, since in reallity various limits will be encountered e.g. maximum voltage of the capacitor, mosfet and diode etc.
The energy stored in a capacitor is proportional to the voltage squared. Therefore, since the same amount of energy is delivered with every decharge of the coil, the voltage will increase less and less per. decharge as the voltage raises. It will however, never completely reach zero.
