Here are some use case of N and P Channel MOSFETs. The ones on the left are PWM and the ones on the right can be switched manually. Note the orientation of the source pin (the one with the arrow).
As you can see, it can be tricky to use the P-Channel ones. You should avoid connecting the PWM to the 12V source since the 12V will drive into the PWM generator.
