I realize changing the simulation speed fixes the problem but still.. why 9v?

I'm quite curious about this as well. If the cap specs are changed you can get it beyond 1Kv!

Undersampling, this is because the simspeed is to fast and the simulator can not correctly do its math. Use around 5ms. Hope this helps

Okay if i were to assume undersampling, then i would assume 1fF at 1s/s to behave worse than a 1uF. Execpt for that fact that 1fF works perfectly.

1fF is the other side of rhe extrem. Its like the cap is not present and the voltage reaches pergectly 5V. Think about how you would program such simulator and start with simspeed 100ms/s. Keep in mind to use a minimum step size to make your simulator fast/useable. One keyword is linear interpolation into future which brings us into the problem of exponential nonlinear circuits were we fail to tip our prognose. Interessting topic I like that!

BTW dont forget that a EC diode is also a cap by default with 5pF junction capacity. Tune it to zero and you will also see a little overshot with 1fF load cap. As long as your circuit is fully made out of linear components its easy for the simulator. The problem starts with nonlinear components like a simple diode. Caps resisror inductors vcvs cccs ccvs

Transistors diodes and even opamps (because of clipping in some circuits) are not linear
