UK or Euro style three phase supply (phases may not be correct, this is quite simply to show what different phases look like.)
A phase shift is either a lag behind or forward jump (that's how I put it) in an AC waveform. Blue is 0 degrees phase, green 120 degrees, and orange 240 degrees. Each line carries 240VAC at 50 Hz. I live in the USA, so if there even exists a three phase supply, the lines would carry 120VAC at 60 Hz. The lag is visible on the waveforms, as each are the same line voltage and frequency, but the waves still peak at different times.
Easy to understand, once you think about it. :-)
