They don't need to be 120 to be three different phases

Both legs are 120° from the source. Your not able to see the three phase voltage because its not grounded on the wye. I will post the schematic with the wye grounded and the source floating to show the voltages at the load.

Besides a motor can balance the loading for power and the phase by induction and capacitance of winding. Mostly any transformer can do the same.

Any time some company turns on a big machine that can cause a lag or leed on a power leg. Even in your home a vacuum or heater or AC could do this, real world is not perfect this is why you build a margin of error correction or tolerance in to your project.
