Takes the dc component out of a signal. The dc component is added to a signal to allow it to be amplified by a transistor (which blocks negative current at the gate). Adding a dc component allows a signal with positive and negative values to pass through the transistor. The capacitor is then used to remove the dc component leaving the original signal but amplified.
