Change potentiometer wiper position. Lower resistance equals higher temperature in a negative temperature coefficient (NTC) thermistor.  This diagram represents the operation of temperature sensors in many common systems.  The controller monitors the voltage between the fixed and variable resistor and interprets the voltage as a relative temperature as programmed.  The voltmeter is the signal to the controller.
