The voltage is being clipped when the diode allows current to flow, this is because of the voltage drop across the diode that your measuring.

Put the voltmeter across the resistor

You only have a Half wave rectifier here. A full wave needs more diodes. See the Examples tab under Full Wave Rectifier

If you put in a .700 mv DC supply in series with your AC supply , and put a volt meter across the resistor, you can see the diode conduct, due to the 700 mv reverse bias. 😊😊
