Kann mir jemand helfen und sagen, warum die Ausgangsspannung nicht konstant ist, sondern immer "zuckt"?

Nice, put a 10mA load and go down with input below 2V sure it drops out. But after that it does not startup at 4V. So low drop regulators have some surprises ;-) i made a workaround which results in a nice hysteresis on off behaviour check this you may like it http://everycircuit.com/circuit/6170799594012672
