Problem is, the 5 ohm resistors need to be in excess of 125 W each. You’ll be dissipating quite a lot of heat that way.

That would be totally incorrect at 100watt input each 5 ohm is using less than 50 watts. You need to learn how to calculate power. Also the point is to waste power so a tube guitar amp can totally saturate but not injure your ears while maintaining a 8 ohm load as seen to the amp.
