How to use an N-Channel MOSFET like an NPN Transistor as a switch

Without the 1M ohm resistor, the mosfet would stay open even if the switch was opened again. You want to use a 1M ohm resistor in order to create as little current as possible (12V/1 000 000R = 0.000012A) I found it difficult to understand the difference in usage between a BJT and a MOSFET, I hope this will help those with the same issue. Have fun experimenting!

The n channel goes after the load, being connected to the negative of the battery. P channel should connect to the positive of the battery.

Depends on what you want, rich! But most beginners prefer by magic a source follower.

A BJT is is a current controlled transistor while a FET is a voltage controlled transistor. Also a transistor is more like an amplifier than a switch. Good luck
