Here is a little circuit to simulate a dice. Push the switch under the display dice and let's go....
This version fix the 7 issue.
To have a better pseudo random throw, let your finger more or less on the switch.

I don't think it's quite right yet. It isn't random at all- with the button depressed circuit cycles thru 1, 3 and 5, and depending on which number shows on the display at the time the button is released the outcome displayed will always be the same. Keep at it!..

Also, I see lots of unused real estate in your workspace here- meaning your circuit will be better showcased with an optimized component layout.. =^)
