Will this work in practical? will there be any delay in Brightness due to presence of Capacitor? 

how to keep the light ON for 1 minute after switch is turned OFF?

Thought about it, you don't need the resistor. Theoretically, a !! 12 F !! capacitor, as long as you got the patient to charge it with such a low voltage source, will keep the LED bright for at least 60 seconds. You can make a separate switch, charge the capacitor with a high voltage source first then turn to the led.
