Why adding Large Caps sometimes results in negligible improvement. 

Turn ON switch to source before starting simulation, for initial conditions.
Turn OFF source switch immediately.

I'm pretty confused as to how this models any real world system where I might be given a choice between these capacitor types. Can you talk us through this a bit better please?

My pleasure! This is mainly in the case where High Voltage and low ESR is necessary. Ceramics derate with Voltage but have the best Dynamics and density otherwise. Electrolytics are able to maintain high capacitance to much larger voltages. It's just a demo on why just smacking the two together doesn't solve anything...
