I'm noticing all of your circuits have at least two power supplies in them... you don't really need two or more power supplies just to drive an led or a light.

Sure but this same thing could be accomplished with just one ac power supply, just have to wire the LEDs correctly. All the dc power supply is doing here is upping the voltage to 2, you could use a single ac power supply with amplitude of 2 volts. Also, resistors go in series of leds, not inductors.
