This is a simple experiment to play around with a couple of SPDT switches. As usual we use a 470 resistor to protect the LED while connecting it to a 9V battery through the switches.

For maximum recommended current, resistor could be 352Ohms

You are absolutely correct. In this instance I am just following what the book (Make Electronics) is using in their experiment but R=350Ohms would provide us with the maximum recommended current of 20mA & a 2V drop which is standard for many generic LEDs.
