Can i jump start a vehicle by putting + on alternator output and - on engine block? Or is that just gonna short the alternator (I have no way of getting to the battery terminals)

Check owner's manual for the vehicle you want to jump start to make sure it is safe and you do not damage electronics. If safe to jump start, connect running car at battery terminals plus and negative and to plus terminal and good frame ground of vehicle being jumped, do not have vehicle frames touching each other. If car to motorcycle jump, make sure engine of car is off and only 12 volts is sent to motorcycle. An expensive fry to motorcycle (or light duty equipment) if alternator 16 volts is sent.

You have to make sure that you're on the right pole that returns directly to the battery, but yes... It is possible in short durations, but the alternator to battery cable will also become hot as well due to it supplying your starter through the cable with everything else.
