Sadly cars power system is not stable. Its namely 12 Volts. Its not uncommon to have even 14,8 Volts levels in there... Personally i would go with some sort of constant current source on those leds...

Vehasmaa said it. Your cars voltage is 12 volts when running off the battery. However when your car is running, the alternator increases your voltage to around 14.4 Volts normally. (This is to overcome the battery's potential voltage to charge it)

Apply an alternating voltage from 11V to 14.4V to see what will happen in a real automotive environment. And measure the current which is a good indicator how bright or healthy your LEDs are. 20mA +-10mA seems to me a good learning target for you.
