Why is the MOSFET unable to turn the LED on even with ~7.5x the gate voltage?

Try increasing the MOSFET width.

I get it, the MOSFET's length is really wrong. It works best at a length of 50 nm.

Or the width should be 5 microns

There is a circuit called fun with MOSFETs, try copying his settings and get a few MOSFET data sheets to learn how the setting affects change for different mosfets.
