Why do I have such Amp peaks on my diodes?

They're not high at all. They're peaking at 118mA owing to the diode voltage drop (without which they'd peak at 120/1K = 120mA).

That's how rectification works. You don't get smooth DC power straight out of the rectifier. It depends on the application, but a capacitor will get some odd the ripple out. Usually though, the next step is some sort of voltage regulator, be it switching, or linear, or whatever.
