The sparks are due to transient currents induced by parasitics. These parasitics can be thought as unwanted capacitors, inductors, and resistors that are otherwise absent in the ideal circuit design. When you close a switch, a surge of current charges these unwanted capacitors, giving momentary low impedance paths. Also, the fact that the switch travels closer and closer to contact, a distance will be achieved where the voltage on one end will be enough to break down the air and cause a plasma for current to flow even before completely closing. When you disconnect a circuit, parasitic inductances don't "want" to suddenly change current, so it opposes this change by inducing a voltage that favors the current.
