The secondary winding is connected in such a way to subtract their voltage from the primary winding. This result in the voltage at load (7.5V) being equal to the difference between primary (10V) and secondary (2.5V) winding voltages.
The same principle can be applied using a single taped winding, so called 'Autotransformer'.
