Can someone please tell me why the transistor adjustments available in Everycircuit don't match the data sheets?

The datasheets include all the parameters for the highest level SPICE models for more accurate simulation. Everycircuit uses lower level models since they're reasonably accurate and a lot simpler to use for small circuits like you see here, so they don't need as many parameters.
