Why Re the secondary voltages not 180 degrees apart?

Actually, yes the secondary voltages are 180 degrees out of phase. It all depends on the reference point that the voltages are measured from. Usually, this is the ground of the circuit.

If you reverse the direction of the orange voltmeter by clicking the reverse direction button and re-run the simulation, the secondary voltages will then appear 180 degrees out of phase.
