The only reason you have 5V at output is because you have set the LED load to 5V working. The 5.1V zener has insufficient current and can be removed without affecting circuit operation at all. Better to use a resistor as the load and adjust your 5 Ohm resistor so that 13.6mA flows through the zener (this odd value is the EC default for zeners - in a real life circuit you can look at zener data sheet to determine optimum value). When you have done this you will find that varying the input voltage (within reasonable limits!) will have little affect on output voltage.

There are, of course, better ways of achieving this voltage reduction.

This is about charging the phone with a 9V battery. The LED is there for demonstration only. The mobile phone battery should be connected instead of the LED. Output - 5V 800mA.
